Nice choice in subs. Not many people go for Infinity Subs, but they are good. I just installed Kappa Perfects all the way around in my cab. Sounds amazing. Anyway, each sub will push 350watts RMS (1400watts max), even push it to about 400watts RMS (good audio companies have a habit of listing the RMS a little lower than what they can actually handle).
I have two Alpine Type R 12s being run by one of the last true beasts of amplifiers the Alpine MRV-1507 V12. This pushes about 400 watts to each one of my subs and they say they only handle 300 RMS (1000watts max). I have had this setup twice in my life now (once in an Integra before it got stolen). I will list what I think are really good amps, not really cheaper stuff you can get at Best Buy or something like that.
But here's a list of possible Amps.
Alpine MRV-1507 (discontinued, but can be found on Ebay all the time)
phoenix gold TI600.2
this all depends on how you want to wire your subs or if they are Dual Voice Coil or not. If they are single, you need a 2 or 4 channel amp. If they are DVC, you can run them with a Class D Mono amp. It all depends. Just think- you have about 700 to 800 watts of power that you absolutely need. You don't want to under power subs cause that causes clipping and will fry the voice coils in the long run. Rule of thumb: more power is actually better. You just gotta look around, but if you want to spend the $300-400 look for the Alpine or the Phoenix Gold amps I suggested. Hope this helped and good luck with your banger.
Infinity all around, no complaints. As for an amp, I love the Blaupunkt PA series. If you can find a PA2200 then you'd do fine with that, but they are discontinued. Its what I had until one of my subs blew and fried part of it. I replaced it with the less powerful 600W version and no problems. Great amps, and hella small too.
Ebay is the shizznit...I have gone through about 7 different systems in my life from my old Integra to my Beemer now. I have gone ebay now for the last 4 out of 5. The only better deal I found at an audio shop was a 10" Eclipse Sub for 150 bucks when retail was 350. But I have gotten JL W6s brand new for 150 on ebay, Alpine Type Rs for 200 a set when retail is 500 a pair. You can find mad deals. Most of the stuff on ebay in regards to car audio is sold by dealers now days anyway, so the reputation is good. Make sure to read the feedbacks of the sellers for even more of an idea of how things are.
As for the infinity's all around, I got that for a Christmas Present, but my dad sells guitar parts online, so he is on ebay 24/7. As for the Alpine 1507, I am on the second one I have ever owned and I bought both used off Ebay. Both are the best damn amps I have ever owned in my life. Of course you can check Crutchfield or even your local Audio shops, cause you never know what you can find, but I do recommend Ebay to anyone looking for a good deal on real quality stuff.
Another question if I get a new amp does that mean I can put it in place of my stock amp, throwing the stock one away? Or , because of the subs I have to run both.
If only new amp, more than dual channel for entire car plus subs or is dual channel enough?

you cant replace the factory amp with a 2 channel, you will need at least a 4ch.
You need to run the 2ch bridged for the subs only and not even try to connect it to the factory amp. If you got the DVC version then you dont need to bridge the sub, but thats still all it should power.
