A/c Fan goes High

My Fan keep going to high on its own, then it go back to low

What year is your car? Can you increase the fan speed once it drops? does it stay there or drops again after you increased the speed?

This is normal if you have it set under auto mode. It adjust accordingly to temperature settings. In manual mode, you adjust the fan speed manually by increasing the fan speed.

It's 2001 525i. I thought it was in auto mode, but i cannot figure out to set it or take off the auto mode. I was evening thinking something wrong with my A/C,

I think you have to push the auto button again and/or press any of the other three buttoms just above it and the light will go out. Adjust the speed by pressing the + or - buttom right below the temperature display screen.
I always leave it in auto mode and set it at 68 degrees interior temp. There is nothing wrong with the A/C... or computer.
