We used to be owners of a 1986 Mercedes 300E but got rid of that car cause got too high in miles (244K) and the car's wiring harness was going bad. (typical of W124)

In my opinion, the e39 is an excellent car & the maintenance can be cheap if you are aware of the technologies available & if you have a reasonable technical background.
Currently I am having two e39 vehicles & I wish to have another e46 – 330. My first e39, 530i – 2002 has exceeded 370,000 KM now but still in an excellent condition. It is costing me 2500$ every year (every 50,000 KM).
This forum is an excellent source of information to learn more about your car & if you search, you can find some threads about the maintenance cost of the e39.
Finally, I think 7000$ is a bit high for this car unless it is very well maintained & have almost no faults on it. Or else if the tires, break pads, routers, control arms, bushes, belts, filters, are in a good conditions then it can be reasonable price.
Generally speaking, try to do some maintenance by yourself, visit this site regularly & no need to go for extended warranty. This is my personal opinion …
