there is no way offset 30 at stock height will rub even with a 45 series tire.
I'm current running this as my winter set up....
17x8 et20 with 225/45 R17 Blizzaks on them. i am lowered on coilovers and dont rub at all front or back.
My summer set up is much more aggressive on offset but that doesn't pertain to your question in anyway since youre not planning on going low so i'll just give you the info for my winter set up
