318i starter problems

I have a 95 318i and when i start the car the idle goes up and down very quickly and then it bogs out if i don't gas it.
some have told me its the mass air flow censor or the o2 censor.

could it be anything other than those two things?

There is a metal gasket between the two intake manifold halves and if someone inverted it upon replacement that could cause an intake air flow leak that is screwing with your O2 sensor's actions. Thinks fuel mixture is too lean, then it's too rich, then it compensates again. Have a garage give it a smoke test to see where the leak is.

to check if its the MAF, try unplugging it and starting. If the idle fixes itself then its prolly that. (It has a default setting if the MAF goes out)
