if by "relative ease" you mean w/o the burden of FUNDING the project, then yes... it would be pretty easy... but if you're gonna pay for it... well then, that's a whole different ball game... the s-14 is a damn expensive engine to buy, modify and repair
your money would be much more usefull if spent on an m50 or even 325i engine
but... ifyou want to, you can make the m10 a pretty damn good engine. too bad i'm not too knowledgable about the m10, but i know of a few guys who know you can take that engine alot further than you think
turbo (a mild rebuild with good bolts and 8psi would be pretty damn fun)... switch from injection to bigass Webber carbs. (it'd be illegal, but hey :P ).. different cam (i believe you can switch the valve springs to the 325i double valve springs)... that kinda stuff... there's a good amount you can do. talk to some 2002 & e21 guys
BUT... since you asked how BIG of an engine you can fit in there.... m50 is a good swap, but i've seen the 8 series V-12 shoe-horned into an e30 before
