easy question 1: i would assume, but can you exchange bumpers from early models and late models?

2: can you remove the power steering? possibly replace it with something else so you have that better thick steering feel?

3: how well do the dealers help out? do they still carry most parts for these cars? how are the prices compared to other makes/models... expensive or comparable?

yes you can exchange bumpers.
yes you can remove the power steering, and it might involve a little work but you can put in different steering racks to make it more responsive.

and to your last question, dealers are a pain in the royal F_cking a$$! i hate them and forever will hate them. i can't stand dealers and i cringe every time i have to speak with them. they will do anything to squeez money out of you. and as far as prices go, shop arround, parts stores like lordco will be cheaper then the dealership, they can't get some stuff cause they dont have a dealership license but they can get most stuff. and some things you can modify so generic pieces will fit and work properly. but use the dealer as a verry last resort.
