I also have a 2004 X5. My SE S710a bluetooth phone recognized that my car has a bluetooth car kit and prompted me to enter the passcode. I couldn't pair it because I didn't have the right passcode. My understanding is that some 2004 X5's were built with the necessary bluetooth modules. In that case only a software upgrade is necessary. My dealer quoted me $200 to upgrade the software. I am visiting them this Friday to have this done.
One caveat is that you need to disable the BMW assist to use the BMW bluetooth.

I don't know about the X5 but I have a 2005 X3 with BMW assist and bluetooth. Verizon is my cell provider and I have a Motorola V710 phone. My phone works with the bluetooth. The key which I was told by a BMW USA customer service rep is that the pairing (putting in the 4 digit code) has to be done within 2 minutes of turning the key from the 0 position to any other position. If you car recognized the phone and the phone recognized the car then is should be able to work. Try the pairing within the 2 minute limit.
